What is bulgur?
You may not be sure what bulgur is, or probably think it is the same as cracked wheat.  According to experts, bulgur is different than cracked wheat in its processing. “This tasty grain is also made from wheat berries, but unlike cracked wheat, berries are cooked, the bran is removed and they are then dried and crushed. Bulgur wheat has a wonderfully light and nutty flavour and is very easy to cook. “ (1)

Another interesting fact about bulgur is that it has more fiber than rice or couscous (2). It also has less fat and calories than the brown rice (3) many of us love and adore, thinking it is the healthiest. Ingredients:


Bulgur (1 cup)

Red lentils (2 cups)

Onion (1 large, finely diced)

Extra virgin olive oil (1/4 cup) (or Butter)

Tomato paste (1 tbsp)

Red pepper flakes (2 tbsp)

Scallions (4, finely diced)

Garlic (2 cloves, minced)

Parley (hand full)

Salt and pepper to taste

Lettuce leaves and lemon for serving


These quantities make about 50 pieces, multiply or divide as needed.
