Chef Fehmi Samanci shares his recipe for celeriac (celery root) in cherry juice with you. 

You can also use orange juice instead of cherry juice for this dish. A version made with orange juice and celeriac cut into medium sized cubes is seen in the picture on the right hand side of this page.


Celeriac (1-2 medium, 1-1.5 lb/450 gr, peeled)

Carrot (1 medium, cubed/80 gr)

Peas (1/2 cup/80 gr)

Shallots (1/2 cup, diced /100gr)

Potato (1 small, cubed /80 gr)

Lemon juice (2 tbsp /15 ml)

Olive oil (1/2 cup/ 100 ml)

Cherry juice (4 cups/ 1 lt)

Dill (a bunch)

Salt and pepper to taste
